Seed oils damage easily when heated
Seed oils contain high levels of polyunsaturated fats that are easily transformed into harmful compounds, including carcinogens, when heated at high temperatures.
Due to this improper heating (which occurs at most restaurants), seed oils are highly susceptible to producing free radicals, resulting in oxidative stress.

Seed oils can be found in almost everything
The ideal ratio of omega-6 to omega-3 fats should be no higher than 4:1 (some even advocate for a 1:1 ratio).
The average American’s ratio is between 15:1 and 25:1. It’s easy to be in this range since seed oils are found in almost every food AND since it’s the primary ingredient restaurants bake, saute, and fry with.
